Ingredients
AP Flour 1 ½ cups/ 215 gms
Baking powder 2 tsp
Baking soda 1 tsp
Kosher Salt 1 tsp
Turmeric 1tsp
Naval Oranges 2
Sugar 1 cup, plus 2 tbs
Sour Cream ¾ cup (substitute Greek yogurt)
Butter ½ cup, melted
Eggs 2 ( substitute with 2 tbs applesauce or mashed bananas)
Or 2 tbs of arrowroot flour
Whipped cream ( optional topping)
Method
Pre-heat oven to 375F
1) Lightly grease and line with parchment paper a 4x9 inch loaf pan
2) Zest one orange and squeeze the juice out of this zested orange. Thinly slice the second orange and keep aside.
3) Whisk together the dry ingredients – flour + salt + baking powder + turmeric (+arrowroot flour if you are using it as an egg substitute)
4) Mix the sugar with the zest and rub them together until the sugar is fragrant.
5) In another bowl mix together butter+ sugared zest + orange juice+ sour cream + eggs
6) Add the wet ingredients to the dry ingredients folding it in to form a smooth batter.
7) Pour the batter into the loaf pan. Scatter the orange slices on top and sprinkle the top with the extra sugar.
8) Bake at 375F for 50-60 mins until the top is golden and the edges slightly brown.
9) If the sliced oranges start to brown cover it with aluminum foil.
10) Slice when cool with a large dollop of whipped cream!!
