A wonderful, flavorful and colorful dish which will bring life to any party table!
Ingredients
Frozen corn 2 cups
Onion 1 small, chopped
Garlic 1-2 cloves, minced
Jalapeno 1, chopped finely, a few slices for garnish
Butter 1 tbs
Cheddar cheese 2 cups
Gouda 1 cup
Cayenne pepper 1 tsp
Salt per taste
Method
1) Mix 1 cup of corn with 1/2 cup of water and blend it into a paste.
2) In a skillet pan heat a tbs of ghee. Add the garlic and onions and sauté until pink. Add the jalapenos and remaining corn and cook until onions are soft.
3) Add the creamed corn and let it come to a boil.
4) Stir in the cheese stirring constantly so that it melts completely.
5) Add cayenne pepper and salt to taste.
6) In a separate pan, add the ghee. Saute 1 tbs of onion, jalapeno, corn, red and orange peppers. Add salt and pepper to the mix. Top the corn cheese dip with this mixture.
7) Garnish with cilantro and jalapenos. Grate amul cheese let on top.
Serve with tortilla chips, veggie chips, bread sticks or flour tortillas
