This bowl of spinach soup is delicious, hearty and so nutritious! The recipe is easy using simple and seasonal ingredients … sure to please!!
Ingredients: Spinach 2 cups, fresh or frozen
Sweet peas ½ cup
Onion 1 medium, chopped
Ginger ½ inch, grated
Garlic 3-4 cloves, crushed
Green chili 1-2, chopped
Salt per taste
Sugar ½ tsp
Milk 1 cup
Bay leaf 1
Pepper ½ tsp
Ghee 1 tbs
Butter 1 tbs
Cream for garnish
Step 1 In a pan, add ghee. Add the ginger, garlic and green chili. Sauté for a couple of mins and add onions. Cook until the onions are soft and pink.
Step 2
Add the peas and tomato and stir it in. Cook for 4-5 minutes.
Now add the sugar and salt and stir the mixture well.
Step 3
Add the chopped spinach. Stir well and let it cook for about 3 mins. Cook until the spinach leaves wilt but don’t overcook. Also, do not cover the pot to prevent oxidation of the green leaves. This will keep the color of the soup green.
Step 4
Once cool, grind this into a smooth paste.
Step 5
In a deep sauce pan add milk along with a bay leave and bring it to a boil. Slowly add the spinach paste and stir well. Let it cook for a few minutes while stirring. Add some water and salt to taste.
Step 6
Serve hot with a dribble of cream for garnish and fresh crushed pepper.
