Ingredients
For the dough
Maida/ Flour 1 cup
Sooji 1 tbs
ghee 3 tbs
Cold butter 2 tbs
Salt ½ tsp
Baking powder 1 tsp
Filling
Green peas 1 cup, fresh or frozen
Ginger 1 inch
Green chilis 1-2
Green Coriander 2 tbs, chopped
Jeera ½ tsp
Haldi ½ tsp
Red Chili powder ½ tsp
Garam Masala ½ tsp
Hing pinch
Amchur ½ tsp
Oil 2 tsp
Saunf ½ tsp crushed
Salt ½ tsp
Step 1
Make the dough using very little cold water. Knead it until the flour gets together and makes a firm dough. Keep it aside for 20 mins
Step 2
Coarsely grind the peas, chili and ginger together. Keep aside
Step 3
Heat oil in a pan. Add the jeera and sauté for a couple of minutes. Add the green peas mix and stir well. Add all the spices and salt and check for spice level desired. Let it cool for a few minutes.
Step 4
Roll the dough into small flat discs, not too thin. Stuff it with a spoonful of filing. Fold the disc to close around the filling. Do not flatten but make sure it is completely sealed.
Step 5
Deep fry until golden brown! Serve warm with chutneys of your choice.
