A light refreshing and nutritious side dish!
Ingredients
Quinoa 2 cups, cooked ( make sure the grains are pre-rinsed and lightly roasted)
Kale 2 cups, chopped small
Paneer 1 cup, (100 gms) cubed and fried
Onions 1, medium (about ½ cup) sliced thin
Carrots ½ cup, slivered thin
Cabbage ½ cup, shredded or chopped
Green chilis 1-2, slit
Mint leaves 2 tbs, chopped
Lemon 1, juice of one
Whole spices cloves 2-3, green cardamom 2-3, cinnamon 1 inch
Chili powder 1 tsp
Cumin powder 1 tsp
Coriander 2 tsp
Garam masala 1 tsp
Sugar ½ tsp
Black pepper ½ tsp
Salt to taste
Method
Heat about 2 tbs of ghee in a pan. Add whole spices and saute for a couple of minutes.
Add green chilis and sauté. Add the chopped onions and saute until light brown. Add salt, black pepper, spices and sugar and stir well.
Add the chopped cabbage and carrots to the pan and stir it all together. Add the fried paneer Saute for a few minutes but let the veggies remain crunchy and not soft.
Fold in the chopped kale and saute for a couple of minutes.
Add the quinoa and mix well. Add lemon juice and adjust salt to taste.
Garnish with chopped mint.
