Delicious, crisp and warm little pastry dough crisps topped with sweet cinnamon apples
Pastry dough:
All purpose flour (Maida) 1 ¼ cup
Salt ½ tsp
Butter 1 stick, cold, chopped small
Ice water 1/3 cup
Mix flour and salt
Mix in the cold butter and using a pastry cutter or forks, cut the butter into the flour so it resembles a thick coarse flour.
Using a spoon, add ice cold water to the flour + butter to form a soft dough.
Press the dough a few times to make a soft ball, do not over knead.
Wrap in saran wrap and let it sit in the refrigerator until you are ready to use it.
Apple topping
Granny Smith apples 4 chopped, (2 ½ cups)
Brown Sugar 1 cup
Cinnamon 1 tsp
Cardamon ½ tsp
Paprika ½ tsp
Salt ½ tsp
Lemon Juice of ½
Butter 2 tbs
Heat butter in a heavy bottomed saucepan. Add the apples and let it cook for 5-6 mins until soft. Add the brown sugar and rest of the ingredients. Mix well and cook until apples are soft. Set it aside.
For the Crisps
Roll out the pastry dough into about 1/4 inch thickness
Using a 3 inch diameter cookie cutter, cut the dough into discs
Scoop up a tablespoon of stuffing on to the dough,
Top the apple stuffing with a mixture of coarse sugar and cinnamon powder .
Bake at 375F for 20 mins until the pastry dough is light brown and fluffy,
Top your apple cinnamon crisps with a dollop of vanilla ice cream!
