Burfi (Indian fudge)

A simple dessert which can be made in just a few minutes. Its simple yet so versatile... you can add nuts, saffron, chocolate, etc to give it your own flavor of choice.





Ingredients:


Butter (unsalted) ¼ cup

Sugar ¾ cup

Traditional Ricotta cheese 1 cup

Carnation Milk Powder 1.5 cups

Green cardamoms 3 crushed


Method


Melt the butter and add Ricotta cheese

Stir until water evaporates

Add the cardamoms

Stir well

Add sugar and cook for 2-5 mins

Add the milk powder and keep stirring until the mixture comes together well, separating from the sides of the pan.

Pour mixture onto a greased thali and let it set for 2-3 hours.

Decorate with silver sheet.


Variation

Melt Chocolate and pour over the barfi mix after it has set. Refrigerate this until chocolate sets and then cut it into diamond shaped pieces.
